Basically, the flavour of the particular honey you use will be reflected in the mead.  If you don&#039;t want a strong honey flavour, go for one of the milder varieties like tupelo.  If you want a full-on honey taste in the mead, go for maybe buckwheat or Scottish heather honey.  Here are a couple of links that might help:
